G A T H E R - I&P Brunch For Mum

The recipe is titled "Sausage & Egg Puff" and dads, let me tell you it's a no brainer.  Prepared the night before, it's the perfect thing for you to whip up for the little lady in your life.  

I have this best friend. She's Southern, from New Orleans to be precise. If you don't have a southern best friend you need to get one quick smart.  

There's something about Southern girls.  There's a certain warmth that radiates from them and they make you feel like part of the family within seconds.  They are born to entertain and to feed people.  And that whole "Southern Belle" thing - that actually exists.

So my best friend, Jane, has this recipe. It's from the "Jambalaya" cook book - a collection of Cajun & Creole favourites from the Junior League of New Orleans. The books was Jane's grandmothers so suffice to say it's a bit of an heirloom.  It also happens to have the seal of approval from Tabasco so it's gotta be good!

Sausage, egg & cheese - you can not f#ck this thing up.  Everyone in the family will love it.
Pair it with a Bloody Mary or a mimosa and you might even get lucky.

Sausage & Egg Puff - Serves 6

  • 450g hot sausage mince

  • 2 slices white bread, cubed

  • 1 cup grated strong cheddar

  • 6 eggs

  • 1 2/3 cup milk

  • 1/2 teaspoon salt

  • 1 drop (or more) Tabasco sauce

  • 1 teaspoon dry mustard

  • 1 teaspoon Worcestershire sauce

Brown the sausage mince in a skillet (pan!), stirring to crumble into small pieces.  Drain.
In an oven proof dish, layer sausage, bread & cheese.  
In a bowl, beat eggs and remaining 5 ingredients.  Pour over layers in the oven proof dish.
Cover & refrigerate 12 hours or overnight.  Remove from fridge 60 minute before cooking.  Bake uncovered, at 175 degrees for 45 minutes or until golden and firm on top.
Serve with a simple green salad, the best sourdough bread you can buy and a strong Bloody Mary - brunch of champions
